French Fines Herbes
The Quirky Foodster Team

Method
- Finely mince all four fresh herbs together just before use — fines herbes does not store well and is always prepared fresh.
- Not applicable; used entirely fresh and raw or added at the very last moment of cooking.
Origin: France — a classical French fresh herb combination, distinct from the dried-herb blends elsewhere in this section given its exclusively fresh, uncooked application.
Use: Added at the very end of cooking or as a raw garnish, classically in French omelets and light cream sauces.
Classic Dishes: French omelet aux fines herbes; light cream sauces; garnish for delicate dishes.
Storage: Does not store — must be prepared fresh and used within hours for best flavor, given chervil and tarragon’s particular fragility.
Variations: A classical, fixed four-herb combination with relatively little traditional variation, unlike most other blends in this reference — its consistency across French culinary tradition is itself notable.
Substitutions: Any three of the four herbs in a pinch, though the combination is considered incomplete without all four.
- Fresh parsley
- chives
- tarragon
- and chervil in equal parts
- finely minced
