  • 400 g (14 oz) Fresh egg noodles
  • 300 g (10 oz) Chicken breast, thinly sliced
  • 200 g (3 cups) Cabbage, shredded
  • 1 medium Carrot, julienned
  • 3 cloves Garlic, minced
  • 3 tbsp Soy sauce
  • 3 tbsp Cooking oil
  • 2 stalks Spring onion, sliced

Method

  1. Cook noodles according to packet instructions, drain and set aside.
  2. Heat oil in a wok over high heat and stir-fry chicken until browned and cooked through, about 5 minutes.
  3. Add garlic, carrot and cabbage, stir-frying for 3 minutes until just tender-crisp.
  4. Add cooked noodles and soy sauce, tossing everything together over high heat for 2–3 minutes.
  5. Scatter with spring onion and serve immediately, hot from the wok.
