Ingredients

  • Coriander seed — 3 tbsp
  • Cumin seed — 2 tbsp
  • Turmeric — 1 tbsp
  • Fenugreek seed — 1 tbsp
  • Black peppercorns — 1 tsp
  • Mustard seed — 1 tsp
  • Cayenne (adjust to taste) — 1/2 tsp
  • Cinnamon — 1/2 tsp

Method

  1. Toast the whole spices (all but turmeric and cayenne) until fragrant, cool, then grind and combine with the turmeric and cayenne.
  2. Toast coriander, cumin, fenugreek, pepper, and mustard seed together; add turmeric and cayenne after grinding.
