Origin: Ethiopia, Eritrea. A slow-cooked base of onions caramelized in niter kibbeh or oil, combined with berbere and tomato, forming the foundational red base for most Ethiopian meat and lentil wats.
Flavor Profile: Deep and savory with moderate heat from berbere, rounded by a long-cooked onion sweetness.
Culinary Uses: Base for doro wat (chicken stew), siga wat (beef stew), and misir wat (red lentil stew).
Regional Variations: Onion cook time varies significantly by household, with some cooks insisting on hours of slow caramelization before liquid is added; berbere ratio determines final heat.
Storage: Refrigerate 4–5 days; freezes well for a few months, often made in bulk.
Notes: Berbere is the dry spice blend and awaze the wine-based condiment made from it — kulet is a third, cooked-stew-base application of berbere.
