Ingredients

  • Red onions, very finely chopped — 1 kg (2.2 lb)
  • Niter kibbeh (Ethiopian spiced butter) or ghee — 100 g (1/2 cup)
  • Berbere spice blend — 60 g (6 tbsp)
  • Garlic cloves, minced — 4
  • Fresh ginger, grated — 15 g (1 tbsp)
  • Tomato paste — 30 g (2 tbsp)
  • Chicken stock or water — 250 ml (1 cup)
  • Salt — to taste

Method

  1. Cook finely chopped onions in a dry, heavy-bottomed pot over medium-low heat (no oil initially), stirring frequently,
  2. for 20-25 minutes until they release their liquid and begin to soften.
  3. Add niter kibbeh, continue cooking onions until deeply golden and caramelised, another 15-20 minutes.
  4. Stir in berbere, garlic and ginger; cook 5 minutes, stirring constantly to bloom the spices without burning.
  5. Add tomato paste, cook 2 minutes, then gradually add stock or water.
  6. Simmer 20-30 minutes until thickened and deeply flavoured; season with salt to taste.
