Ingredients

Method
- Combine the sliced meat with the olive oil, garlic, yogurt, paprika, cumin, salt and pepper in a bowl, mixing well to coat evenly.
- Cover and marinate in the refrigerator for at least 4 hours, or overnight for best flavour.
- Stack the marinated meat slices tightly onto skewers, or arrange in a compact layered stack on a roasting tray to mimic the traditional vertical spit.
- Cook under a hot grill or in a 220°C (425°F) oven for 18–20 minutes, turning or rotating occasionally, until browned and cooked through.
- Slice the cooked meat thinly, shaving off the outer, most browned layers first, as is traditional.
- Serve piled into warm flatbread with sliced tomato, onion, lettuce and a garlic yogurt sauce.
