Ingredients
- 300 g (10 oz) fresh okra, trimmed and halved lengthways
- 2 tomatoes, diced
- 1 small onion, finely chopped
- 2 tbsp vegetable oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Fresh coriander, chopped, to garnish
