Date and Nut Pudding (Halwa al-Tamr)

Ingredients
- 300g (2 cups) Pitted dates, chopped
- 115g (1/2 cup) Butter or ghee
- 50g (1/2 cup) Chopped walnuts
- 1/2 tsp ground cardamom
- 60ml (1/4 cup) Water
- Sesame seeds, to garnish
Method
- Combine the chopped dates and water in a saucepan, and cook over low heat, mashing occasionally, for 10–12 minutes until softened into a paste.
- Stir in the butter or ghee, chopped walnuts and cardamom, mixing thoroughly.
- Cook for a further 5 minutes until well combined and glossy.
- Press into a shallow dish, smoothing the top.
- Sprinkle with sesame seeds and let cool and set before cutting into pieces.
