Ingredients

  • Rabbit, cut into pieces — 1 kg (2.2 lb)
  • Onion, chopped — 150 g (1 medium)
  • Garlic, minced — 15 g (3 cloves)
  • Tomatoes, chopped — 200 g (1 1/3 cups)
  • Dark chocolate, grated — 15 g (1 tbsp)
  • Olive oil — 45 ml (3 tbsp)
  • White wine — 150 ml (2/3 cup)
  • Water — 300 ml (1 1/4 cups)
  • Salt — 8 g (1 1/2 tsp)

Method

  1. Heat olive oil in a heavy pot and brown the rabbit pieces on all sides; remove and set aside.
  2. Sauté the onion and garlic in the same pot until softened.
  3. Add the tomatoes and cook for 8-10 minutes until thickened.
  4. Return the rabbit to the pot, add white wine, water and salt.
  5. Cover and simmer gently for 50-60 minutes until the rabbit is very tender.
  6. Stir in the grated dark chocolate in the final 5 minutes, allowing it to melt into the sauce and enrich it.
