Ingredients

  • - 3 cucumbers, thinly sliced
  • - 1/2 red onion, very thinly sliced
  • - 3 tbsp white wine vinegar
  • - 1 tbsp olive oil
  • - 2 tbsp chopped fresh mint
  • - 1/2 tsp salt
  • - 1/4 tsp black pepper

Method

  1. Place the sliced cucumbers and onion in a mixing bowl.
  2. Whisk together the vinegar, olive oil, salt and pepper.
  3. Pour the dressing over the cucumbers and onion and toss well.
  4. Stir through the chopped mint just before serving.
  5. Let sit for 5 minutes at room temperature so the flavours combine before serving.
