Croquettes aux Crevettes Grises

Ingredients
- - 250 g North Sea grey shrimp, cooked and peeled (9 oz)
- - 60 g Unsalted butter (1/4 cup)
- - 60 g Plain flour (1/2 cup)
- - 300 ml Fish or shrimp stock (1¼ cups)
- - 100 ml Whole milk (1/3 cup + 1 tbsp)
- - 1 g Ground nutmeg (1/4 tsp)
- - 2 Eggs, beaten (for crumbing) (2)
- - 200 g Fine breadcrumbs (2 cups)
Method
- Melt the butter in a saucepan, whisk in the flour and cook for 2 minutes to form a roux.
- Gradually whisk in the warmed stock and milk until smooth and thick. Season with nutmeg, salt and pepper.
- Fold in the shrimp, keeping some whole for texture. Spread the mixture onto a tray and chill for at least 3 hours, or until firm.
- Shape the chilled mixture into small cylinders or ovals.
- Dip each croquette in beaten egg, then coat thoroughly in breadcrumbs; repeat for a double coating.
- Heat oil to 180°C (350°F) and fry the croquettes in batches for 3–4 minutes until deep golden.
- Drain on paper towel and serve immediately with lemon wedges.
