Creamy Irish Goat’s Cheese Tartlets

Ingredients

  • 1 sheet of pre-rolled ready puff pastry
  • 150g soft Irish goat's cheese log
  • 2 large red onions, thinly sliced
  • 1 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 1 tbsp butter
  • 1 egg, beaten (for egg wash); Fresh thyme sprigs

Method

  1. Preheat your oven or air fryer to 200°C (180°C fan).
  2. Melt the butter in a pan over medium heat, add the red onions, and cook slowly for 10 minutes until soft. Stir in the brown sugar and balsamic vinegar, cooking for another 3 minutes until caramelized and jammy. Let cool slightly.
  3. Unroll the puff pastry and cut out four equal squares. Place them on a lined baking sheet.
  4. Using a sharp knife, score a smaller square border about 1cm from the edge of each pastry sheet (do not cut all the way through). Prick the inner square with a fork.
  5. Spoon the caramelized onions into the center of each pastry square. Top with a thick slice of goat's cheese and a few sprigs of fresh thyme.
  6. Brush the outer pastry borders with the beaten egg wash. Bake for 15 minutes until the pastry edges are puffed up and deeply golden, and the cheese is warm and slightly melted.
