Ingredients

  • - 450 g (1 lb) conch meat, cut into small steaks
  • - 1 lime, juiced
  • - 1 cup (125 g) all-purpose flour
  • - 1 tsp salt
  • - 1/2 tsp black pepper
  • - 1/2 tsp garlic powder
  • - 1/2 tsp paprika
  • - 2 large eggs, beaten
  • - 1/2 cup (120 ml) milk
  • - 1 cup (100 g) fine breadcrumbs or cracker meal
  • - Vegetable oil, for frying
  • - 1/4 cup (60 ml) mayonnaise
  • - 1 tbsp lime juice
  • - 1 tsp hot sauce
  • - 1 tsp chopped fresh parsley

Method

  1. Rub conch steaks with lime juice, then pound each with a meat mallet until about 5 mm (1/4 in) thick.
  2. Cut pounded conch into bite-sized pieces.
  3. Set up a breading station: flour mixed with salt, pepper, garlic powder and paprika in one dish; beaten eggs and milk in a second; breadcrumbs in a third.
  4. Dredge conch pieces in seasoned flour, dip in egg wash, then coat in breadcrumbs.
  5. Heat 2 cm (3/4 in) oil in a skillet over medium-high heat. Fry conch pieces 2-3 minutes per side until golden and crisp.
  6. Drain on paper towels.
  7. Whisk mayonnaise, lime juice, hot sauce and parsley for the dipping sauce.
  8. Serve hot with the dipping sauce.

Introduction: Cracked conch is made by pounding conch steaks flat — ‘cracking’ the tough muscle — before battering and frying them until crisp outside and tender within.

Cultural Background: Cracked conch is made by pounding conch steaks flat — ‘cracking’ the tough muscle — before battering and frying them until crisp outside and tender within. Served as bite-sized pieces with a peppery mayo-based sauce, it is a staple starter at fish fries and waterfront restaurants.

Tips: Pound the conch evenly so pieces cook at the same rate; overly thick pieces stay chewy.

Variations: A squeeze of fresh lime just before serving brightens the dish. Some cooks season the breadcrumbs with Old Bay-style seasoning.
