  • 1 (1) cinnamon stick
  • 1/2 tsp (1/2 tsp) whole nutmeg, freshly grated
  • 60 g (1/4 cup) brown sugar
  • 5 ml (1 tsp) vanilla essence
  • A pinch (a pinch) salt
  • 60 ml (1/4 cup) evaporated milk (to finish)

Method

  1. Whisk cornmeal into the water until fully dissolved with no lumps.
  2. In the saucepan, bring milk, coconut milk, cinnamon stick and salt to a gentle simmer.
  3. Slowly whisk in the cornmeal slurry, stirring constantly to prevent lumps.
  4. Cook on low heat 12–15 minutes, stirring often, until thickened and smooth.
  5. Stir in brown sugar, vanilla and half the grated nutmeg; simmer 2 more minutes.
  6. Remove cinnamon stick, ladle into bowls, top with evaporated milk and remaining nutmeg.
