Ingredients

  • Palm nut cream (canned, or fresh extracted) — 400 ml (1 2/3 cups)
  • Onion, diced — 1 large
  • Garlic cloves, minced — 4
  • Ripe tomatoes, chopped — 200 g (7 oz)
  • Fresh ginger, grated — 10 g (1 tbsp)
  • Chile pepper, minced — 1
  • Vegetable or chicken stock — 200 ml (3/4 cup + 2 tbsp)
  • Salt and pepper — to taste

Method

  1. Sauté onion in a heavy-bottomed pot with a little oil over medium heat until softened, about 5-7 minutes.
  2. Add garlic, ginger and chile; cook 2 minutes until fragrant.
  3. Add chopped tomatoes, cook 5-7 minutes until softened.
  4. Stir in palm nut cream and stock; simmer 25-30 minutes, stirring occasionally, until thickened and the oil separates
  5. slightly at the edges.
  6. Season with salt and pepper to taste.
