Ingredients
- - 400 g (14 oz) fresh conch meat, tenderised and finely diced
- - Juice of 4 limes
- - Juice of 1 orange
- - 1 small red onion, finely diced
- - 1 small sweet pepper, finely diced
- - 1 small tomato, deseeded and finely diced
- - 1/2 scotch bonnet pepper, very finely minced (seeds removed for less heat)
- - 2 tbsp (2 tbsp) fresh coriander, chopped
- - Salt and black pepper, to taste
- - 1 tbsp (1 tbsp) olive oil
Method
- Tenderise the conch meat by pounding gently with a mallet, then dice it very finely.
- Place the diced conch in a non-reactive bowl and pour over the lime and orange juice, ensuring the conch is fully submerged.
- Cover and refrigerate for at least 1 hour, or up to 3 hours, stirring occasionally, until the conch turns opaque and firm.
- Drain off most of the excess juice, reserving 2–3 tablespoons.
- Add the red onion, sweet pepper, tomato, scotch bonnet and coriander to the conch. Toss to combine.
- Season with salt, black pepper and olive oil. Toss again and serve chilled.
