- Large Ripe bananas, mashed — 3
- Shredded coconut — 80 g (3/4 cup)
- All-purpose flour — 150 g (1 1/4 cups)
- Granulated sugar — 2 tbsp
- Baking powder — 1 tsp
- Vegetable oil, for frying — 500 ml (2 cups)
Method
- Mash the bananas well in a bowl.
- Stir in the shredded coconut, flour, sugar and baking powder to form a thick batter.
- Heat the oil to 170°C (340°F) in a deep pot.
- Drop spoonfuls of the batter into the hot oil and fry for 3-4 minutes, turning occasionally, until golden brown and cooked through.
- Drain on paper towel and serve warm.
