Ingredients
- 300g cooked, peeled Atlantic prawns (defrosted and dried)
- 1 crisp Gem lettuce, shredded
- For the Marie Rose Sauce: 4 tbsp mayonnaise, 1.5 tbsp tomato ketchup, a few drops of Worcestershire sauce, a squeeze of fresh lemon juice, a pinch of smoked paprika
Method
- In a bowl, whisk together the mayonnaise, tomato ketchup, Worcestershire sauce, and lemon juice until a smooth pink sauce forms. Taste and adjust with a bit of salt or extra lemon if desired.
- Gently fold the dry prawns into the Marie Rose sauce, reserving a few un-sauced prawns for topping the glasses.
- Divide the shredded Gem lettuce evenly among 4 individual serving bowls or classic coupe glasses.
- Spoon the sauced prawns generously over the lettuce bed.
- Dust the very top with a light pinch of smoked paprika, garnish with the reserved prawns and a slice of lemon, and serve immediately alongside buttered brown bread.
