Ingredients

  • - Lamb shoulder, cubed — 350g (12 oz)
  • - Onion, chopped — 150g (1 medium)
  • - Tomato paste — 50g (3 tbsp)
  • - Ground cumin — 3g (1/2 tsp)
  • - Ground cinnamon — 1g (1/4 tsp)
  • - Vermicelli noodles, broken — 60g (2 oz)
  • - Vegetable oil — 30ml (2 tbsp)
  • - Water — 1.4L (6 cups)
  • - Fresh coriander, chopped — 10g (2 tbsp)
  • - Salt — 8g (1 1/2 tsp)

Method

  1. Heat oil in a large pot and brown the lamb with the onion.
  2. Stir in tomato paste, cumin and cinnamon; cook for 1-2 minutes.
  3. Add water and salt, bring to a boil, then simmer covered for 35-40 minutes until the lamb is tender.
  4. Add the vermicelli and simmer for a further 6-8 minutes until tender.
  5. Stir in fresh coriander just before serving.
