Ingredients

  • Dried purple corn kernels — 150 g (5 oz)
  • Water, divided — 1.9 L (64 fl oz)
  • Pineapple rind and core — 1 (from 1 pineapple)
  • Apple, chopped — 1
  • Cinnamon stick — 1
  • Cloves — 4
  • Sugar, or to taste — 100 g (3.5 oz)
  • Lime juice — 2 tbsp

Method

  1. Combine the purple corn, 6 cups of the water, pineapple rind and core, apple, cinnamon stick and cloves in a large pot.
  2. Bring to a boil, then reduce to a simmer and cook for 45–50 minutes until deeply coloured and fragrant.
  3. Strain through a fine sieve into a jug, pressing to extract as much liquid as possible; discard the solids.
  4. Stir in the remaining water and sugar, adjusting sweetness to taste.
  5. Stir in the lime juice just before serving.
  6. Chill well and serve over ice.
