Ingredients

  • Dried corn kernels, soaked overnight — 300 g (10.5 oz)
  • Water, divided — 1.9 L (64 fl oz)
  • Sugar, or to taste — 200 g (7 oz)
  • Cinnamon stick — 1
  • Cloves — 4
  • Vanilla extract — 1 tsp

Method

  1. Drain the soaked corn and blend with 2 cups of the water until fairly smooth.
  2. Strain the mixture through a fine sieve into a large pot, pressing to extract as much liquid as possible; discard the solids.
  3. Add the remaining water, sugar, cinnamon stick and cloves to the pot.
  4. Bring to a gentle simmer and cook for 20–25 minutes, stirring occasionally, until slightly thickened.
  5. Stir in the vanilla extract.
  6. Let cool, then remove the cinnamon stick and cloves.
  7. Chill well before serving, allowing a light natural fermentation to develop if left at room temperature for a day, or serve fresh and unfermented.
