Culinary Uses: Classic marinade for fish and seafood (especially whole grilled or baked fish); used on chicken and vegetables; spooned over tagines just before serving to add freshness.
Regional Variations: Coastal versions (fish-focused) are looser and more acidic; inland versions used for meat are often thicker and less citrus-forward; some families add preserved lemon rind for extra depth.
Storage: Best used fresh within 2–3 days refrigerated, as the fresh herbs discolor and lose brightness; does not freeze well due to the fresh herb content.
Notes: Do not confuse with chimichurri (Argentina) — both are green herb-oil condiments but built from unrelated herb bases (cilantro/parsley/cumin vs. parsley/oregano) and independent traditions.
