Cheddar, Stout & Wild Garlic Bread

Ingredients

  • 400g plain white flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 150g mature Irish cheddar cheese, grated
  • A small handful of fresh wild garlic leaves, finely chopped (or 2 spring onions + 1 clove minced garlic)
  • 200ml Irish stout or porter
  • 150ml buttermilk

Method

  1. Preheat your oven to 190°C (170°C fan) and grease a baking tin or line a baking sheet.
  2. Sift the flour, bicarbonate of soda, and salt into a large bowl.
  3. Add most of the grated cheddar cheese (reserve a handful for the top) and the finely chopped wild garlic to the flour, tossing well to coat.
  4. In a jug, mix the stout and buttermilk together, then pour into the dry ingredients.
  5. Mix swiftly to form a soft dough. Shape into a rough artisan round loaf and place on your baking sheet.
  6. Cut a deep cross across the top, scatter the reserved handful of grated cheddar over the surface, and bake for 40 minutes until the cheese is bubbling and golden-brown, and the loaf sounds hollow when tapped.
