  • Plain flour — 375 g (13 oz)
  • Water — 240 ml (8 fl oz)
  • Oil — 1 tbsp
  • Salt — 1 tsp
  • Minced beef or lamb — 400 g (14 oz)
  • Onion, finely chopped — 1
  • Water, for the filling — 60 ml (2 fl oz)
  • Oil for deep frying

Method

  1. Combine the flour, water, oil and salt into a smooth, firm dough; rest for 30 minutes.
  2. Combine the minced meat, onion, water, salt and pepper for the filling, mixing until slightly loose and juicy.
  3. Divide the dough into portions and roll each into a thin round.
  4. Place a spoonful of filling on one half of each round, fold over, and press and crimp the edges firmly to seal.
  5. Heat oil to 175°C (350°F) in a deep pan.
  6. Fry the chebureki for 3–4 minutes per side until deeply golden and crisp.
  7. Drain on paper towels before serving hot.
