Ingredients

  • 4 medium beetroots
  • 80 g (2/3 cup) walnuts, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp red wine vinegar
  • 1/2 tsp ground coriander seed
  • Pinch of ground blue fenugreek (utskho suneli)
  • 2 tbsp pomegranate seeds
  • Salt, to taste

Method

  1. Roast the beetroots whole, wrapped in foil, at 200°C (400°F) for 45-60 minutes until tender, or boil them for about the same time.
  2. Cool, peel, and grate or finely dice the beetroot into a mixing bowl.
  3. Add the walnuts, garlic, vinegar, coriander, fenugreek and salt, and mix thoroughly.
  4. Chill for at least 20 minutes to let the flavours combine.
  5. Top with pomegranate seeds before serving.
