  • 300 g (2 cups) fine steamed couscous, cooled
  • 500 ml (2 cups) natural yogurt
  • 80 g (1/2 cup) raisins
  • 60 g (1/4 cup) sugar
  • 1 tsp vanilla extract
  • 2 tbsp condensed milk (optional, for extra sweetness)

Method

  1. Steam the couscous as in the Chereh method (see Sides), then fluff and cool to room temperature.
  2. In a large bowl, combine the cooled couscous with yogurt, raisins, sugar and vanilla extract.
  3. Stir in the condensed milk, if using, for extra sweetness.
  4. Chill in the refrigerator for at least 1 hour before serving.
