  • Tinned chopped tomatoes — 400 g (14 oz)
  • Tinned baked beans — 400 g (14 oz)

  1. Heat the oil in a large pan and soften the onion for 5 minutes.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Stir in the bell pepper and grated carrot and cook for 5 minutes until slightly softened.
  4. Add the curry powder and chilli and stir for 1 minute to toast the spices.
  5. Pour in the chopped tomatoes and simmer, uncovered, for 10 minutes until slightly reduced.
  6. Stir in the baked beans, season with salt, and simmer for a further 5 minutes.
  7. Serve warm or at room temperature as a side salad or relish.
