- Water — 600 ml (2 1/2 cups)
- Whole milk — 400 ml (1 3/4 cups)
- Loose black tea (or 4 tea bags) — 3 tbsp
- Thumb ginger, sliced or grated — 1
- Cardamom pods, lightly crushed — 4

Method
- Combine the water, milk, ginger and cardamom pods in a medium saucepan and bring to a gentle boil.
- Reduce the heat and simmer for 3–4 minutes to infuse the spices.
- Add the tea and simmer for a further 3–4 minutes, until the tea has steeped to a rich colour.
- Strain through a fine sieve into cups or a teapot.
- Sweeten with sugar to taste and serve hot.
