Ingredients
- 250 g (2 cups) all-purpose flour
- 1 tbsp sugar
- 1 tsp instant yeast
- 1/2 tsp ground cardamom
- Pinch of saffron threads, soaked in 2 tbsp warm milk
- 1/4 tsp salt
- 300 ml (1 1/4 cups) warm milk
- 1 tbsp vegetable oil, plus extra for cooking
- Date syrup (dibis), for serving
Method
- Whisk together the flour, sugar, yeast, cardamom and salt in a bowl.
- Gradually whisk in the warm milk and saffron milk until a smooth, thick batter forms.
- Stir in the oil, cover, and let the batter rest in a warm place for 30 minutes until bubbly.
- Heat a lightly oiled non-stick pan over medium-low heat and ladle small rounds of batter into the pan.
- Cook for 2 minutes until bubbles form on top and the underside is golden, then flip and cook 1 more minute.
- Stack the warm pancakes and serve with date syrup poured over the top.
