Ingredients
- - 250 g (2 cups) all-purpose flour
- - 1 tbsp sugar
- - 1 tsp instant yeast
- - 1/2 tsp ground cardamom
- - 1/4 tsp saffron threads, soaked in 2 tbsp warm water
- - 1/2 tsp salt
- - 300 ml (1 1/4 cups) warm milk
- - 1 large egg
- - 1 tbsp vegetable oil, plus more for frying
- - 120 ml (1/2 cup) date syrup (dibs), for serving
Method
- In a large bowl, whisk together the flour, sugar, yeast, cardamom and salt.
- Add the saffron water, warm milk, egg and oil, whisking until a smooth, thick batter forms.
- Cover the bowl and leave in a warm place for 30-40 minutes, until the batter is bubbly and slightly risen.
- Heat a non-stick pan over medium-low heat and brush lightly with oil.
- Ladle small rounds of batter, about 7 cm (3 in) wide, into the pan and cook for 2 minutes until bubbles form on top.
- Flip and cook the other side for 1-2 minutes until golden.
- Stack the warm pancakes on a plate and drizzle generously with date syrup before serving.
