Ingredients

  • - 800g (1 3/4 lb) Nile perch fillets or steaks (or other firm white fish)
  • - 2 tomatoes, chopped
  • - 1 onion, sliced
  • - 1 green bell pepper, sliced
  • - 3 tbsp vegetable oil
  • - 2 cloves garlic, minced
  • - 1 tsp ground cumin
  • - 1/2 tsp paprika
  • - 1 tsp salt, or to taste
  • - 1/2 tsp black pepper
  • - 1 lime, juiced
  • - 125ml (1/2 cup) water

Method

  1. Season the fish with half the salt, half the black pepper, and the lime juice. Set aside for 10 minutes.
  2. Heat the oil in a large frying pan over medium-high heat and sear the fish for 2-3 minutes per side until lightly golden. Remove and set aside.
  3. In the same pan, sauté the onion and garlic until softened, about 4 minutes.
  4. Add the tomatoes, bell pepper, cumin, paprika, remaining salt and pepper, and cook for 5 minutes until the tomatoes soften.
  5. Pour in the water, then return the fish to the pan, spooning some sauce over the top.
  6. Cover and braise over low heat for 10-12 minutes, until the fish is cooked through and flakes easily.
  7. Serve hot, spooning the sauce and vegetables over the fish.
