Ingredients

  • Potatoes, peeled and cubed — 4
  • Onion, chopped — 1
  • Garlic, minced — 2 cloves
  • Kale or collard greens, very finely shredded — 1 bunch
  • Chorizo, sliced (optional) — 100 g (3.5 oz)
  • Olive oil — 3 tbsp
  • Water or stock — 6 cups (1.4 litres / 48 fl oz)
  • Salt and pepper — to taste

Method

  1. Heat the olive oil in a large pot and sauté the onion and garlic until softened.
  2. Add the potato and water or stock, and bring to a boil.
  3. Simmer for 20 minutes until the potatoes are very tender.
  4. Blend or mash the potatoes directly in the pot until smooth.
  5. Stir in the finely shredded kale and chorizo if using, and simmer for a further 5–8 minutes until the greens are tender.
  6. Season with salt and pepper and serve hot, drizzled with a little extra olive oil.
