Introduction: Grilled camel meat skewers seasoned simply and cooked over hot charcoal, a distinctive Saharan street food found across Mauritanian towns.

Cultural Background: Camel meat has long been part of the diet in Mauritania’s desert regions, valued for its availability in an arid environment, and grilling it into skewers over charcoal has become a popular way to enjoy it as a quick street-side meal.

Tips: Marinate for as long as possible, even a few hours, for the deepest flavour, as camel meat benefits from thorough seasoning. Don’t overcrowd the skewers — leave a little space between pieces for even charring.

Variations: Use beef as a substitute if camel meat is unavailable outside Mauritania. Serve with a side of grilled vegetables for a fuller meal.

Storage: Refrigerate cooked skewers in an airtight container for up to 2 days.

Reheating: Reheat in a hot dry pan for 2–3 minutes per side, or briefly under a hot grill, to restore some char.
