Ingredients

  • - 500g (1 lb) beef sirloin, cut into 2cm (3/4 inch) cubes
  • - 2 tbsp vegetable oil
  • - 1 tsp ground cumin
  • - 1 tsp paprika
  • - 1/2 tsp ground ginger
  • - 1/4 tsp cayenne pepper
  • - 1 clove garlic, minced
  • - 1/2 tsp salt
  • - 1 lime, cut into wedges, for serving

Method

  1. In a bowl, combine the oil, cumin, paprika, ginger, cayenne, garlic and salt to form a paste.
  2. Add the beef cubes and toss thoroughly to coat. Cover and marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. Thread the beef cubes onto skewers, leaving a little space between each piece.
  4. Preheat a grill or griddle pan over high heat.
  5. Grill the skewers for 2-3 minutes per side, turning occasionally, until well-charred outside and cooked to preference inside.
  6. Serve hot with lime wedges for squeezing over.

Introduction: Small skewers of spiced, seared beef are a popular way to begin a meal or accompany drinks in Chadian towns, grilled quickly over open coals by street vendors and home cooks alike.

Cultural Background: Small skewers of spiced, seared beef are a popular way to begin a meal or accompany drinks in Chadian towns, grilled quickly over open coals by street vendors and home cooks alike. The spice rub reflects trade-route influences from North Africa and the wider Sahel.

Tips: Do not overcrowd the skewers, as this prevents even charring. Let the meat come to room temperature before grilling for more even cooking.

Variations: Goat or lamb can be used in place of beef. A touch of ground baobab seed or dried chilli flakes can be added to the spice rub for a sharper heat. No authentic vegetarian version exists for this dish; not converted.

Storage: Cooked skewers keep in an airtight container in the refrigerator for up to 2 days.

Reheating: Reheat in a hot dry pan for 1-2 minutes per side, taking care not to overcook the meat further.
