Ingredients

  • 150 g Fine white cornmeal (1 cup)
  • 750 ml Water (3 cups)
  • 250 ml Whole milk (1 cup)
  • 40 g Sugar (3 tbsp)
  • 2g Ground cinnamon (1/2 tsp)
  • 1g Salt (a pinch)
  • 30 g Smooth peanut butter (optional) (2 tbsp)

Method

  1. Whisk the cornmeal into 200ml (3/4 cup) of the cold water in a bowl until completely smooth with no lumps.
  2. Bring the remaining water to a boil in the saucepan over medium-high heat with the salt.
  3. Pour the cornmeal slurry into the boiling water while whisking constantly to prevent lumps forming.
  4. Reduce heat to low and simmer for 8-10 minutes, stirring frequently with a wooden spoon, until thick and smooth.
  5. Stir in the milk, sugar and cinnamon, and cook for a further 3-4 minutes until creamy.
  6. Swirl in the peanut butter if using, off the heat, until fully dissolved.
  7. Ladle into bowls and serve warm.
