Ingredients

  • - 500 g (1.1 lb) beef chuck, cubed
  • - 300 g (10.5 oz) lamb shoulder, cubed
  • - 2 onions, sliced
  • - 3 carrots, sliced
  • - 2 potatoes, chunked
  • - 1/2 head cabbage, chunked
  • - 2 bell peppers, sliced
  • - 4 cloves garlic, whole
  • - 2 bay leaves
  • - 1 tsp paprika
  • - 500 ml (2 cups) beef stock
  • - Salt and pepper, to taste

Method

  1. Preheat the oven to 150°C (300°F).
  2. Layer half the beef and lamb in the bottom of the pot.
  3. Layer half the onion, carrot, potato, cabbage and pepper on top.
  4. Season the layer with salt, pepper and paprika, and tuck in the garlic cloves and bay leaves.
  5. Repeat with the remaining meat and vegetables to build a second layer, seasoning again.
  6. Pour the stock gently down the side of the pot without disturbing the layers.
  7. Cover tightly and cook in the oven for 3.5-4 hours, undisturbed, until the meat is fall-apart tender.
  8. Serve directly from the pot, spooning through all the layers.

Variations:

Add a layer of sliced eggplant for extra depth. Some regions include a splash of red wine in the stock for richness.
