  • - 200 g (7 oz) cottage cheese
  • - 2 large eggs
  • - 100 ml (1/3 cup + 1 tbsp) sunflower oil
  • - 1 tsp salt
  • - 200 ml (3/4 cup) plain yogurt, for serving

Method

  1. Preheat the oven to 200°C (400°F) and oil the baking pan.
  2. In a bowl, mash the white cheese and cottage cheese together with the eggs and half the oil until
  3. combined.
  4. Lay one filo sheet flat, brush lightly with oil, and spoon a thin line of filling along one edge.
  5. Roll loosely into a long rope, then coil it into a spiral in the centre of the pan.
  6. Repeat with remaining sheets and filling, coiling each rope outward to fill the pan.
  7. Brush the top generously with remaining oil.
  8. Bake for 35-40 minutes until deep golden and crisp.
  9. Rest for 10 minutes before slicing into wedges. Serve with cold plain yogurt.
