Ingredients

  • Ground cashews — 2 cups (240 g / 8.5 oz)
  • Sugar — 1 cup (200 g / 7 oz)
  • Eggs, separated — 5
  • Potato, boiled and mashed — 1
  • Zest of 1 lemon
  • Baking powder — 1/2 tsp
  • Whole cashews, to decorate

Method

  1. Preheat the oven to 170°C (340°F) and grease a baking dish.
  2. Beat the egg yolks with the sugar until pale and fluffy.
  3. Fold in the ground cashews, mashed potato, lemon zest and baking powder.
  4. In a separate bowl, whisk the egg whites to stiff peaks.
  5. Gently fold the whisked egg whites into the cashew mixture in batches, keeping as much air in the batter as possible.
  6. Pour into the prepared dish and smooth the top.
  7. Arrange whole cashews decoratively on top.
  8. Bake for 40–45 minutes until golden and a skewer comes out clean.
  9. Cool completely before slicing.
