Ingredients

  • - 250g (1 1/4 cups) quinoa, rinsed
  • - 500ml (2 cups) water
  • - 1 tomato, diced
  • - 1/2 red onion, finely diced
  • - 1/2 cucumber, diced
  • - 100g (3/4 cup) sweetcorn kernels, cooked
  • - 50g (1/3 cup) crumbled queso fresco
  • - 3 tbsp lime juice
  • - 3 tbsp olive oil
  • - Fresh coriander, chopped
  • - Salt and pepper to taste

Method

  1. Combine quinoa and water in a saucepan, bring to a boil, then cover and simmer for 15 minutes until the water is absorbed.
  2. Fluff the cooked quinoa with a fork and allow to cool to room temperature.
  3. In a large bowl, combine the cooled quinoa with tomato, onion, cucumber, corn and cheese.
  4. Whisk together the lime juice, olive oil, salt and pepper, then pour over the salad and toss well.
  5. Finish with chopped coriander and serve chilled or at room temperature.
