Ingredients

  • - All-purpose flour — 300g (2 1/2 cups)
  • - Water — 180ml (3/4 cup)
  • - Salt — 5g (1 tsp)
  • - Potatoes, boiled and mashed — 400g (2 cups)
  • - Spring onion, chopped — 30g (1/3 cup)
  • - Ground coriander — 3g (1/2 tsp)
  • - Red chilli flakes — 2g (1/2 tsp)
  • - Vegetable oil, for frying — 60ml (1/4 cup)
  • - Plain yogurt, to serve — 200g (3/4 cup)

Method

  1. Combine flour, salt and water into a soft dough; knead for 5 minutes, then rest for 20 minutes.
  2. Mix the mashed potato with spring onion, coriander and chilli flakes.
  3. Divide the dough into 4 balls and roll each into a thin oval.
  4. Spread filling over one half of each oval, fold over, and press the edges to seal.
  5. Heat oil in a flat pan over medium heat and fry each bolani for 3-4 minutes per side until golden and crisp.
  6. Drain briefly and serve hot with plain yogurt.
