Ingredients

  • - 400g Strong white flour
  • - 7g Active dry yeast
  • - 250ml Warm water
  • - 1 tsp Salt
  • - 2 tbsp Vegetable oil
  • - 350g Minced beef or pork
  • - 1 large Onion, finely chopped
  • - 0.5 tsp Black pepper, ground
  • - 700ml Vegetable oil, for deep-frying

Method

  1. Dissolve the yeast in the warm water and let it stand for 5 minutes until foamy.
  2. Mix the flour and salt in a large bowl, then stir in the yeast mixture and oil to form a soft dough.
  3. Knead for 8 minutes until smooth, then cover and leave to rise in a warm place for 1 hour, or until doubled.
  4. Meanwhile, mix the minced meat with the onion, salt and pepper until well combined.
  5. Divide the risen dough into 8 pieces and roll each into a round about 12cm (5in) wide.
  6. Place a portion of the meat filling in the centre of each round, then fold the edges up and over, pleating them together but leaving a small opening in the middle where the filling is visible.
  7. Heat the oil in a deep pan to 170C (340F).
  8. Fry the beliashy filling-side down first for 3-4 minutes, then flip and fry the other side for a further 3-4 minutes until deep golden and cooked through.
  9. Drain on kitchen paper and serve warm.
