Method
- Mash the ripe bananas smoothly in a bowl.
- Whisk in the egg, sugar and cinnamon until combined.
- Fold in flour and baking powder to form a thick, scoopable batter.
- Heat oil to 170°C (340°F) in a frying pan or pot.
- Drop tablespoon-sized scoops of batter into the hot oil and fry for 2–3 minutes per side until golden brown and cooked through.
- Drain on paper towel and dust with a little extra sugar or cinnamon before serving warm.
