Method

  1. Cream the butter and sugar together until light and fluffy.
  2. Beat in the egg yolks and vanilla extract.
  3. Gradually mix in the cornmeal and flour until a soft dough forms.
  4. Chill the dough for 30 minutes.
  5. Preheat oven to 180°C (350°F) and line a baking tray with parchment.
  6. Shape the dough into small flattened rounds and place on the tray.
  7. Bake for 18-20 minutes until the tops are golden and slightly cracked.
  8. Cool completely on the tray before serving, as they firm up while cooling.
