  • Whole reef fish (about 1 kg / 2.2 lb), cleaned — 1
  • Coconut milk — 480 ml (16 fl oz)
  • Onion, sliced — 1
  • Garlic, minced — 2 cloves
  • Tomato, sliced — 1
  • Salt and pepper — to taste
  • Lime, cut into wedges — 1

Method

  1. Preheat the oven to 180°C (350°F).
  2. Season the fish inside and out with salt and pepper.
  3. Place the fish in a baking dish and scatter the onion, garlic and tomato around and over it.
  4. Pour the coconut milk over the fish.
  5. Cover with foil and bake for 30–35 minutes until the fish is cooked through and flakes easily.
  6. Serve hot with lime wedges.
