Ingredients

  • Potatoes, peeled and cubed — 1 kg (2.2 lb)
  • Large eggs — 4
  • Mayonnaise — 1/2 cup (120 ml)
  • Yellow mustard — 2 tbsp
  • Onion, finely diced — 1/2
  • Green bell pepper, finely diced — 1/2
  • Sweet pickle relish — 2 tbsp
  • Paprika, plus more for garnish — 1 tsp
  • Salt and black pepper, — to taste

Method

  1. Place potatoes in a pot of salted water; bring to a boil and cook 12-15 minutes until fork-tender. Drain and cool slightly.
  2. Meanwhile, hard-boil the eggs: cover with cold water, bring to a boil, then remove from heat and let sit covered 10 minutes. Cool, peel and chop.
  3. In a large bowl, whisk mayonnaise, mustard and paprika together.
  4. Fold in warm potatoes, chopped eggs, onion, bell pepper and relish.
  5. Season with salt and pepper. Chill at least 1 hour before serving.
  6. Garnish with a light dusting of paprika before serving.
