Ingredients
- Very fresh conch meat, finely diced — 450 g (1 lb)
- Fresh lime juice (about 8-10 limes) — 1 cup (240 ml)
- Fresh orange juice — 1/2 cup (120 ml)
- Small onion, finely diced — 1
- Green bell pepper, finely diced — 1
- Red bell pepper, finely diced — 1
- Tomatoes, seeded and finely diced — 2
- Cucumber, finely diced — 1/2
- Scotch bonnet pepper, finely minced (to taste) — 1/2-1
- Salt, — to taste
- Lime wedges, to serve
Method
- Place diced conch in a bowl and cover with lime and orange juice; let sit 15-20 minutes, stirring occasionally, until the conch turns opaque ('cooked' by the acid).
- Drain off most of the citrus juice, reserving a few tablespoons.
- Add onion, both bell peppers, tomatoes, cucumber and scotch bonnet to the conch.
- Toss well, season with salt, and add reserved citrus juice back in to taste.
- Chill 10 minutes before serving, or serve immediately with extra lime wedges.
