Ingredients
- 200 g (1 cup) dried green or brown lentils
- 1 small red onion, finely diced
- 1-2 fresh green chillies, finely chopped
- 2 tbsp fresh lemon juice
- 2 tbsp vegetable oil
- 1 tsp prepared mustard or 1/2 tsp mustard powder
- 1/2 tsp salt, to taste
- 2 tbsp chopped fresh parsley or coriander
Method
- Rinse the lentils and cook in plenty of water for 18-20 minutes until tender but not mushy.
- Drain thoroughly in a colander and allow to cool completely to room temperature.
- In a mixing bowl, whisk together lemon juice, oil, mustard and salt to make the dressing.
- Add the cooled lentils, diced onion, chillies and herbs to the bowl.
- Toss gently until well combined, taste and adjust seasoning, then chill for at least 20 minutes before serving.
