Method

  1. Toast the raw groundnuts in a dry frying pan over medium heat for 4-5 minutes, stirring often, until golden and fragrant. Cool, then roughly crush.
  2. Arrange the sliced avocado, diced tomato and sliced red onion on a serving plate.
  3. Whisk the lemon juice, oil and salt together and drizzle over the salad.
  4. Scatter the crushed toasted groundnuts on top just before serving.
