Ingredients
- - 200 g (1 cup) Long-grain white rice
- - 500 ml (2 cups) Water
- - 750 ml (3 cups) Whole milk
- - 150 g (3/4 cup) Granulated sugar
- - 1 Cinnamon stick
- - 1 piece Lime or lemon peel (a few strips)
- - 0.5 tsp Ground cinnamon (for garnish)
- - 1 pinch Pinch of fine sea salt
Method
- Rinse the rice under cold water until the water runs mostly clear.
- In a medium saucepan, combine the rice and water, and bring to a boil.
- Reduce to a simmer and cook covered for 12 minutes until the water is mostly absorbed.
- Add the milk, sugar, cinnamon stick, citrus peel and salt, and stir well.
- Simmer uncovered over low heat, stirring frequently, for 30-35 minutes until thick and creamy.
- Remove the cinnamon stick and citrus peel before serving.
- Spoon into bowls and dust with ground cinnamon.
