Ingredients
- Cumin seed — 1 tbsp
- Black peppercorns — 1 tsp
- Whole cloves — 2
- Small cinnamon stick — 1
- Green cardamom pods — 2
- Bay leaf — 1
Method
- Add the whole spices directly to the cooking water or to oil before adding rice, in the manner of a pilaf.
- Optional light toasting of the whole spices in a small amount of oil or ghee before adding rice and water, similar to a pilaf technique.
Origin: Original formula for this reference — a general-purpose seasoning designed to elevate plain steamed or boiled rice across a range of cuisines without tying to one specific regional tradition.
